To celebrate this exciting launch, we are inviting Washoku Lovers to join us and learn Japanese basic culinary skills and cooking techniques.

Chef / Instructor Hideo Dekura

Washoku Lovers Kitchen has a special guest chef from Washoku Culinary School, a Good Will Ambassador of Japanese cuisine, Hideo Dekura. He is a Master of Japanese food.
Hideo will show us how to cook badic Japanese food with a focus on fundamental skills.

Cooking Technique 1

Vegetable cutting techniques
Foundations of vegetable cutting (small cuts)
Foundations of decorative cutting (katsura leaf decoration)
Preparing vegetables

Using dashi - soups and boiling
Foundations of Japanese cuisine (preparing dashi and the 5 senses)
Cooking rice (polishing, boiling)


Cooking Technique 2

Using dashi - soups and boiling
Dishes served in bowls / Miso-soup
Stewed dishes / Niku jyaga
Steamed dishes / Chawan-mushi
Decorating and serving


Cooking Technique 3

Fried dishes / Tempura
Preparing vegetables and seafood
Decorating and serving


Cooking Technique 4

Handling fish
Processing small fish, dividing into three
Sashimi / Garnish
Grilled fish / Yakizakana


Cooking Technique 5

Handling fish
Processing small fish, dividing into three
Sushi / making sushi rice and sushi
