I believe it’s very important to think about dining from the customer’s point of view, not just from the perspective of a chef. It’s a big responsibility to serve Washoku and thinking about what makes customers happy is always on my mind.
We put a lot of time and effort into choosing our ingredients, particularly fresh fish. Finding seafood that is suitable for sashimi in Queensland can be difficult, but we don’t let that stop us and we also bring in fresh fish from Melbourne.
I started my career as a chef at a fresh seafood robata (grill) restaurant in Yokohama. After that I trained in Japanese fusion cooking, and as a sushi chef. In Japan I also worked at a new Kyo-Ryori (a style of food from Kyoto) restaurant where I had the opportunity to learn from a respected chef about really bringing out the best in ingredients. With this knowledge under my belt I was finally ready to come to Australia.
The Japanese food people in Australia usually eat is just a small part of what Japanese cuisine has to offer. It makes me really happy when my cooking makes people more interested in Japanese food, and in Japan. We look forward to serving you!
